Sweet Potato with Goat Cheese

Ingredients
- 4 sweet potatos peeled and cut into half inch slices
- 1/4 cup dried cranberries chopped
- 1/4 cup candied pecans chopped
- 4 ounces Goat Cheese
- 1 tablespoon brown sugar
- pinches sea salt
- 1/2 teaspoon cinnamon
- 1 tablespoon half and half
- 1 tablespoon Calivirgin Blood Orange Olive Oil more for brushing sweet potatoes and drizzling
- honey for drizzling if desired

Instructions
Preheat oven to 400 degrees.
Combine the sugar and cinnamon and set aside.
Brush each side of the rounds with Calivirgin Blood Orange Olive Oil and also sprinkle a bit of salt and the sugar cinnamon on each side.
Place one side down on a heavy cookie sheet. Bake for 15 minute; turn and then bake for another 15 minutes.
While baking combine the goat cheese with the cream and Calivirgin Blood Orange Olive Oil with a mixer
When rounds are done, let cool a bit then add about a teaspoon of goat cheese mixture on each round, sprinkle with pecans and dried cranberries.
Drizzle with a bit more of Calivirgin Blood Orange Olive Oil and serve immediately. Enjoy
